Vendaikkai Fry (Okra/ Bhindi/ Ladies Finger Fry)

Okra/ Bhindi or Vendaikkai or Ladies finger is a tasty vegetable and especially okra fry is a dish liked by almost everyone. I find most of the kids like this fry. The toughest part in preparing Okra fry lies in “cutting the veggie”.  Cooking part is very easy, minimum ingredients, we can make a delicious fry!


Ingredients:
  • Ladies finger – ¼ Kg
  • Green chillies ( slitted) – 2 Nos.
  • Curry  leaves – few
  • Salt to taste

For seasoning:
  • Mustard – 1 tsp
  • Urad dhal – 1 tsp
  • Oil – 2 tbsp

Method:

Wash okra in running water and wipe with a clean towel and allow it to dry. Then cut okra into small discs and spread it on a plate. Take a non stick kadai, pour oil, season with  mustard, urad dhal and curry leaves. Add green chillies, salt and  okra , fry till  the stickiness in the vegetable goes off and this turn into nice greenish brown colour. Switch off and serve it with rice and Sambar, Kara Kuzhambu, Rasam or Curd.

Note:

Don’t close the lid, otherwise, the vegetable will become mushy and the fry won’t be crunchy.
